Instructions:

Make the base:
In a bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until smooth.
Add crushed graham crackers or oats if you want a firmer texture. -
Chill:
Freeze for 15–20 minutes so they firm up. -
Chocolate coating:
Melt chocolate chips (and coconut oil if using) in the microwave in 20–30 second intervals.
Dip each ball into the melted chocolate and place back on the tray. -
Set:
Refrigerate 15–20 minutes until the chocolate hardens.
Tips:

Add crushed pretzels for a salty crunch.
