No-bake peanut butter balls

Instructions:

  1. Make the base:
    In a bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until smooth.
    Add crushed graham crackers or oats if you want a firmer texture.

  2. Shape:
    Roll into 1-inch balls and place on a parchment-lined tray.

  3. Chill:
    Freeze for 15–20 minutes so they firm up.

  4. Chocolate coating:
    Melt chocolate chips (and coconut oil if using) in the microwave in 20–30 second intervals.
    Dip each ball into the melted chocolate and place back on the tray.

  5. Set:
    Refrigerate 15–20 minutes until the chocolate hardens.


Tips:

  • Add crushed pretzels for a salty crunch.

  • Drizzle white chocolate over the top for decoration.

  • Store in the fridge up to 2 weeks or freeze up to 3 months.
