1. Raspberry Gelée Center
Ingredients

1 cup raspberries (fresh or frozen)

2 tbsp sugar

1 tbsp lemon juice

1½ tsp gelatin + 2 tbsp water
Instructions

Bloom gelatin by sprinkling it over the water; let sit 5 minutes.

Mash or blend, then strain for a smooth purée.

Stir in gelatin until melted.

Pour into mini silicone molds (small spheres or cubes).

Freeze 1–2 hours until solid.
2. Pistachio Cheesecake Mousse
Ingredients

8 oz (225 g) cream cheese, softened

½ cup pistachio paste

½ cup powdered sugar

1 cup heavy cream, whipped to soft peaks

2 tsp gelatin + 3 tbsp water
Instructions

Bloom gelatin in water.

Beat cream cheese, pistachio paste, sugar, and vanilla until smooth.
