Cook the beef
In a large pot, brown the ground beef over medium heat. Drain excess fat if needed. -
Add beans & vegetables
Add pinto beans, green chiles, and canned tomatoes. -
Add broth & seasonings
Pour in beef broth and stir in cumin, chili powder, paprika, salt, and pepper. -
Simmer
Bring to a boil, then reduce to low and simmer 20–30 minutes to blend flavors. -
Serve
Ladle into bowls and top with cheese, sour cream, cilantro, or crushed tortilla chips.
Tips

For a thicker soup, mash a few beans into the broth.

Add corn or potatoes to make it extra hearty.

Use leftover shredded beef or rotisserie chicken instead of ground beef.
