“Easy Pinto Beans, Green Chile and Beef Soup

Instructions

  1. Cook the beef
    In a large pot, brown the ground beef over medium heat. Drain excess fat if needed.

  2. Add aromatics
    Add the diced onion and cook until soft (3–4 minutes).
    Stir in the garlic and cook 30 seconds.

  3. Add beans & vegetables
    Add pinto beans, green chiles, and canned tomatoes.

  4. Add broth & seasonings
    Pour in beef broth and stir in cumin, chili powder, paprika, salt, and pepper.

  5. Simmer
    Bring to a boil, then reduce to low and simmer 20–30 minutes to blend flavors.

  6. Serve
    Ladle into bowls and top with cheese, sour cream, cilantro, or crushed tortilla chips.


Tips

  • For a thicker soup, mash a few beans into the broth.

  • Add corn or potatoes to make it extra hearty.

  • Use leftover shredded beef or rotisserie chicken instead of ground beef.
