Cheesecake Stuffed Chocolate Chip Cookies

Instructions

Step 1 — Make the Cheesecake Centers

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.

  2. Scoop into 1–1½ teaspoon-sized dollops onto a parchment-lined tray.

  3. Freeze for 30–45 minutes (important! They must be firm).


Step 2 — Make the Cookie Dough

  1. Cream butter, brown sugar, and white sugar until fluffy.

  2. Add eggs and vanilla; mix until smooth.

  3. In a separate bowl, whisk flour, baking soda, baking powder, and salt.

  4. Add dry ingredients to wet and mix until a dough forms.

  5. Fold in chocolate chips.


Step 3 — Assemble the Cookies

  1. Scoop a large ball of dough (about 2 tbsp).

  2. Flatten it slightly and place a frozen cheesecake ball in the center.

  3. Cover with another small piece of dough and seal completely.

  4. Place on a baking sheet, leaving space — they are BIG cookies!


Step 4 — Bake

  • Bake at 350°F (175°C) for 12–15 minutes

  • They should be golden around the edges, soft in the middle.

  • Let cool 10 minutes so the cheesecake sets inside.
