1. Raspberry Gelée Center

Ingredients

  • 1 cup raspberries (fresh or frozen)

  • 2 tbsp sugar

  • 1 tbsp lemon juice

  • 1½ tsp gelatin + 2 tbsp water

Instructions

  1. Bloom gelatin by sprinkling it over the water; let sit 5 minutes.

  2. In a small pot, heat raspberries, sugar, and lemon juice until soft.

  3. Mash or blend, then strain for a smooth purée.

  4. Stir in gelatin until melted.

  5. Pour into mini silicone molds (small spheres or cubes).

  6. Freeze 1–2 hours until solid.


2. Pistachio Cheesecake Mousse

Ingredients

  • 8 oz (225 g) cream cheese, softened

  • ½ cup pistachio paste

  • ½ cup powdered sugar

  • 1 tsp vanilla

  • 1 cup heavy cream, whipped to soft peaks

  • 2 tsp gelatin + 3 tbsp water

Instructions

  1. Bloom gelatin in water.

  2. Beat cream cheese, pistachio paste, sugar, and vanilla until smooth.

  3. Melt gelatin (microwave 10–15 seconds) and mix into the pistachio mixture.

  4. Fold in the whipped cream gently until silky.
